4 cups fresh sweet corn (about 6-8 ears)

1 medium onion, chopped

2 cloves garlic, minced

2 medium potatoes, diced (Yukon Gold or red potatoes work well)

4 cups vegetable or chicken broth

1 cup whole milk or coconut milk (for a dairy-free option)

1 tablespoon olive oil or butter

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh chives or parsley for garnish

Prepare the Corn: If using fresh corn, shuck the ears and slice the kernels off the cob. Set aside. You can also use frozen corn if fresh is not available; just measure out 4 cups.

    Sauté the Aromatics: In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion and cook for about 5 minutes, until softened and translucent. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

      Add Potatoes and Broth: Stir in the diced potatoes, dried thyme, smoked paprika, and a pinch of salt and pepper. Pour in the vegetable or chicken broth and bring the mixture to a boil.

        Simmer: Once boiling, reduce the heat to low and let it simmer uncovered for about 15 minutes, or until the potatoes are tender.

          Incorporate the Corn: Add the fresh or frozen sweet corn to the pot. Cook for another 5-7 minutes until the corn is heated through and tender.

            Creamy Finish: Stir in the milk (or coconut milk) and adjust the seasoning with extra salt and pepper if needed. Allow the chowder to warm on low for about 5 minutes.

              Blend (Optional): For a creamier texture, use an immersion blender to blend a portion of the chowder directly in the pot, or transfer about half of the soup to a blender and blend until smooth, then stir it back into the pot.

                Serve: Ladle the chowder into bowls, garnish with freshly chopped chives or parsley, and enjoy hot!
