1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces

1 ripe mango, diced

1/4 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon lime juice

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon olive oil

Salt and pepper to taste

1/4 cup chopped fresh cilantro (for garnish)

Optional: sesame seeds for garnish

Instructions
 

Marinate the Chicken: In a bowl, combine the sweet chili sauce, soy sauce, lime juice, minced garlic, grated ginger, and a pinch of salt and pepper. Add the chicken pieces and toss to coat. Cover and let it marinate in the refrigerator for at least 30 minutes, preferably up to 1 hour for better flavor.

    Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and add the chicken pieces to the skillet in a single layer. Cook for about 5-6 minutes until golden brown on one side.

      Add Mango and Glaze: Flip the chicken pieces and add the diced mango to the skillet. Pour the reserved marinade over the chicken and mango. Cook for an additional 4-5 minutes, stirring occasionally, until the chicken is cooked through (internal temperature reaching 165°F/75°C) and the sauce has thickened slightly.

        Serve: Remove from heat and garnish with chopped fresh cilantro and sesame seeds if desired. Serve warm as an appetizer or over a bed of rice for a delightful main dish.
