Sweet Chili Chicken Tenders

1 lb (450 g) boneless, skinless chicken tenders

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup sweet chili sauce (store-bought or homemade)

2 tablespoons honey

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

Fresh cilantro (for garnish)

Sesame seeds (for garnish)

Cooking oil (for frying)

Instructions
 

Prepare the Chicken: Rinse the chicken tenders under cold water and pat them dry with paper towels. Set aside.

    Set Up Breading Station: In a shallow bowl, combine flour, garlic powder, onion powder, paprika, salt, and pepper. In another bowl, beat the eggs. In a third bowl, place the panko breadcrumbs.

      Bread the Tenders: Dredge each chicken tender in the flour mixture, shaking off any excess. Next, dip it into the beaten eggs, allowing any excess to drip off. Finally, coat the tender in panko breadcrumbs, pressing gently to adhere. Repeat with all chicken tenders.

        Make the Sauce: In a small saucepan over medium heat, combine sweet chili sauce, honey, soy sauce, rice vinegar, and sesame oil. Stir until well combined and simmer for 3-4 minutes until slightly thickened. Remove from heat and set aside.

          Fry the Chicken: In a large skillet or a frying pan, heat about 1/2 inch of cooking oil over medium-high heat. Once the oil is hot, carefully add the breaded chicken tenders in batches. Fry for about 4-5 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F / 75°C). Remove from the pan and drain on paper towels.

            Glaze the Tenders: While the chicken tenders are still hot, toss them in the prepared sweet chili sauce until evenly coated.

              Serve: Transfer the glazed chicken tenders to a serving platter. Garnish with chopped fresh cilantro and a sprinkle of sesame seeds for added flair. Serve with extra sweet chili sauce on the side for dipping.
