Ingredients
  

1 lb (450g) boneless, skinless chicken thighs

1 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon honey

1 tablespoon rice vinegar

2 green onions, finely chopped (for garnish)

1 tablespoon sesame seeds (for garnish)

Steamed rice or noodles (for serving)

Optional: sliced red peppers for a spicy kick

Instructions
 

Marinate the Chicken:

    - In a bowl, combine the sweet chili sauce, soy sauce, sesame oil, minced garlic, grated ginger, honey, and rice vinegar. Whisk until well blended.

      - Cut the chicken thighs into bite-sized pieces and add them to the marinade. Toss to ensure each piece is well coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for deeper flavor).

        Cook the Chicken:

          - Heat a large skillet or wok over medium-high heat. Add a drizzle of oil if desired.

            - Once hot, add the marinated chicken (reserve the marinade for later) and sauté for about 5-7 minutes until the chicken is browned and cooked through, stirring occasionally.

              Add the Sauce:

                - Once the chicken is cooked, pour the reserved marinade into the skillet. Bring the sauce to a simmer and cook for an additional 5 minutes, allowing it to thicken slightly and coat the chicken evenly.

                  Garnish and Serve:

                    - Remove from heat and garnish with chopped green onions and sesame seeds. If desired, add sliced red peppers for an extra kick.

                      - Serve hot over steamed rice or noodles, drizzling any extra sauce on top.
