Ingredients

1 cup Greek yogurt (plain or vanilla)

1/2 cup almond milk (or any milk of your choice)

3 tablespoons chia seeds

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 cup mixed berries (fresh or frozen, such as strawberries, blueberries, raspberries, and blackberries)

1/4 cup granola (for topping)

Mint leaves (for garnish, optional)

Instructions

Combine Yogurt and Chia: In a medium bowl, mix the Greek yogurt, almond milk, chia seeds, honey (or maple syrup), and vanilla extract until smooth. Let this mixture sit for about 15-20 minutes, allowing the chia seeds to absorb some of the liquid and thicken.

Prepare the Berries: If using fresh berries, rinse and slice them as needed. If using frozen, let them thaw slightly for easier mixing.

Layer the Cups: Once the yogurt-chia mixture has thickened, begin layering your cups. Start with a layer of the yogurt mixture at the bottom, followed by a layer of mixed berries, and then another layer of the yogurt mixture. Repeat until you reach the top of the cup.

Top with Granola: Finish each cup with a sprinkle of granola for added crunch and texture.

Garnish and Chill: Optionally, garnish each cup with a fresh mint leaf for a pop of color and an aromatic touch. Chill the cups in the refrigerator for at least 30 minutes before serving to enhance the flavors.

Serve: Once chilled, serve immediately, or store covered in the fridge for up to two days. Enjoy your delicious Sweet Berries Chia Yogurt Cups!
