1 lb (450g) chicken breast, diced

1 cup fresh pineapple chunks (or canned)

1 red bell pepper, sliced

1 green bell pepper, sliced

1 small onion, chopped

3 cloves garlic, minced

1 tablespoon ginger, minced

1/4 cup soy sauce

1/4 cup honey

1 tablespoon sriracha (adjust for heat preference)

2 tablespoons rice vinegar

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 teaspoon sesame oil

Salt and pepper to taste

Green onions, chopped, for garnish

Sesame seeds, for garnish

Marinate the Chicken: In a bowl, combine chicken pieces with soy sauce, honey, sriracha, rice vinegar, minced garlic, and ginger. Mix well to coat the chicken evenly. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator for deeper flavor).

    Prep the Sauce: In a separate bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Add this to the marinated chicken mixture and stir until well combined.

      Cook the Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken mixture and cook for about 5-7 minutes, stirring frequently, until it’s browned and cooked through.
