1 lb (450g) boneless, skinless turkey breast, thinly sliced

2 tablespoons vegetable oil

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

2 cups broccoli florets

1 cup snap peas

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup soy sauce

1/4 cup apple cider vinegar

1/4 cup honey

1 tablespoon cornstarch

2 tablespoons water

1 teaspoon sesame oil

Cooked rice or quinoa for serving

Sesame seeds and chopped green onions for garnish

Instructions
 

Prep the Sauce: In a small bowl, combine soy sauce, apple cider vinegar, honey, sesame oil, and corn starch. Whisk until smooth and set aside.

    Heat the Pan: In a large non-stick skillet or wok, heat vegetable oil over medium-high heat.

      Cook the Turkey: Add the sliced turkey breast to the pan and stir-fry for about 4-5 minutes, until browned and cooked through. Remove the turkey from the pan and set aside.

        Sauté the Vegetables: In the same pan, add sliced red and green bell peppers, onion, broccoli florets, and snap peas. Stir-fry for 4-5 minutes, or until the vegetables are just tender but still crisp.

          Add Flavors: Stir in the minced garlic and ginger, cooking for an additional 30 seconds until fragrant.

            Bring It Together: Return the cooked turkey to the skillet. Pour the sauce over the turkey and vegetables. Stir well to coat and cook for another 2-3 minutes, allowing the sauce to thicken slightly.
