Sweet and Sour Tofu Stir Fry

14 oz firm tofu, drained and pressed

1 cup bell peppers (mixed colors), sliced

1 cup broccoli florets

1 cup snap peas

1 small onion, sliced

3 cloves garlic, minced

1 inch piece of ginger, grated

2 tablespoons cornstarch

3 tablespoons vegetable oil (divided)

1/4 cup soy sauce (low-sodium)

1/4 cup rice vinegar

1/4 cup brown sugar

1 tablespoon ketchup

1 tablespoon sesame oil

1 teaspoon red pepper flakes (adjust to taste)

Sesame seeds and green onions for garnish

Instructions
 

Prepare the Tofu: Cut the pressed tofu into bite-sized cubes. Toss the cubes in cornstarch until they are lightly coated. This will help create a crispy texture when frying.

    Cook the Tofu: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Once hot, add the tofu cubes and fry them for about 8-10 minutes, turning occasionally until golden brown and crispy on all sides. Remove from the skillet and set aside.

      Stir-fry the Vegetables: In the same skillet, add the remaining 1 tablespoon of vegetable oil. When hot, sauté the onions, garlic, and ginger for about 1 minute until fragrant. Add the sliced bell peppers, broccoli florets, and snap peas. Stir-fry for about 5-7 minutes, until the veggies are tender-crisp.

        Make the Sauce: In a small bowl, whisk together the soy sauce, rice vinegar, brown sugar, ketchup, sesame oil, and red pepper flakes until well combined.

          Combine Everything: Return the crispy tofu to the skillet with the vegetables. Pour the sweet and sour sauce over the tofu and veggies. Toss everything together gently to coat evenly. Let it cook for an additional 3-4 minutes, allowing the sauce to thicken slightly.

            Serve: Once everything is well coated and heated through, remove from heat. Garnish with sesame seeds and sliced green onions. Serve hot over steamed rice or noodles.
