1/4 cup soy sauce (low sodium recommended)

2 tablespoons honey or maple syrup

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 teaspoon grated fresh ginger

2 cloves garlic, minced

1 teaspoon cornstarch mixed with 1 tablespoon water (optional, for thickening)

For the Salmon:

4 salmon fillets (about 6 ounces each)

Salt and pepper to taste

1 tablespoon olive oil

For the Bowls:

2 cups cooked jasmine or brown rice

1 cup steamed broccoli florets

1/2 cup shredded carrots

1/2 cup edamame (shelled)

1 avocado, sliced

2 green onions, sliced

Sesame seeds for garnish

Chopped cilantro (optional)

Prepare the Teriyaki Sauce: In a small saucepan over medium heat, combine soy sauce, honey, rice vinegar, sesame oil, ginger, and garlic. Whisk together and bring to a gentle simmer. If you prefer a thicker sauce, stir in the cornstarch mixture and cook for another 1-2 minutes until thickened. Remove from heat and set aside.

    Cook the Salmon: Season the salmon fillets with salt and pepper. In a large skillet or grill pan, heat the olive oil over medium-high heat. Add the salmon, skin-side down, and cook for about 4-5 minutes until the skin is crispy. Flip the fillets and cook for another 3-4 minutes or until the salmon is cooked to your desired doneness. Drizzle some of the teriyaki sauce over the salmon during the last minute of cooking.

      Assemble the Bowls: In a bowl, place a serving of rice at the bottom. Arrange steamed broccoli, shredded carrots, edamame, and sliced avocado on top of the rice. Add a salmon fillet and drizzle with additional teriyaki sauce.

        Garnish: Sprinkle sesame seeds and sliced green onions over the top. If desired, add a few cilantro leaves for an extra burst of freshness.
