Ingredients

2 cups rolled oats

1 cup almond butter (smooth or crunchy)

1/2 cup honey or maple syrup

1/4 cup brown sugar (packed)

1/2 cup chopped almonds (or your favorite nuts)

1/2 cup dried fruit (like cranberries, apricots, or raisins)

1 teaspoon vanilla extract

1/2 teaspoon sea salt

1/2 teaspoon cinnamon

Optional: 1/4 cup chocolate chips or dark chocolate chunks

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, leaving some overhang on the sides for easy removal later.

Mix the Wet Ingredients: In a large mixing bowl, combine the almond butter, honey (or maple syrup), and brown sugar. Use a microwave or a small saucepan over low heat to gently warm the mixture until it's smooth and well-blended. Stir in the vanilla extract and sea salt.

Combine Dry Ingredients: In another bowl, mix together the rolled oats, chopped almonds, dried fruit, and cinnamon.

Combine Wet and Dry Ingredients: Pour the almond butter mixture over the dry ingredients. Stir until everything is fully combined, ensuring the oats and nuts are evenly coated. If using, fold in chocolate chips.

Press the Mixture: Transfer the mixture to the prepared baking dish. Using a spatula or your hands, firmly press it down into an even layer.

Bake the Squares: Bake in the preheated oven for 20-25 minutes, or until the edges are slightly golden and the center feels firm to the touch. Keep an eye on them to avoid over-baking.

Cool and Slice: Remove from the oven and let the tray cool completely in the pan. Once cooled, use the parchment paper to lift the energy squares from the pan. Transfer to a cutting board and slice into squares or bars of your preferred size.

Store: Store the energy squares in an airtight container at room temperature for up to a week or refrigerate for longer freshness. They can also be frozen for up to three months.
