Sunny Citrus Veggie Rolls

Ingredients
  

4 large rice paper wraps

1 cup shredded carrots

1 cup cucumber, julienned

1 cup red bell pepper, thinly sliced

1 cup purple cabbage, shredded

1 ripe avocado, sliced

1/2 cup fresh cilantro leaves

1/4 cup fresh mint leaves

1/4 cup sesame seeds (optional)

1/4 cup almond butter (for dipping)

Juice of 2 limes

Zest of 1 orange

1 tablespoon soy sauce

1 tablespoon honey (or agave syrup for a vegan option)

Instructions
 

Prepare the Dipping Sauce: In a small bowl, combine the almond butter, lime juice, orange zest, soy sauce, and honey. Whisk until smooth. If the sauce is too thick, add a splash of water to reach your desired consistency. Set aside.

    Prep the Veggies: Wash and slice all the vegetables as indicated in the ingredients list. Make sure they're all ready before you assemble the rolls.

      Soften the Rice Paper: Fill a large bowl with warm water. Dip one rice paper wrap in the water for about 10-15 seconds, or until it softens. Remove it from the water and lay it flat on a clean, damp kitchen towel or a cutting board.

        Assemble the Rolls:

          - Place a few pieces of avocado, followed by a handful of each of the shredded veggies (carrots, cucumber, bell pepper, cabbage).

            - Add some cilantro and mint leaves on top.

              - If using, sprinkle with sesame seeds over the veggies.

                Roll It Up: Gently lift the bottom end of the rice paper over the filling, then fold in the sides. Roll it tightly away from you to encase the filling securely. Repeat with the remaining rice paper wraps and fillings.

                  Serve: Arrange the veggie rolls on a platter. Serve with the almond butter dipping sauce on the side. Enjoy fresh!
