2 large whole wheat or spinach tortillas

2 ripe avocados, halved and pitted

4 large eggs

1 cup cherry tomatoes, halved

1 cup baby spinach leaves

½ teaspoon garlic powder

½ teaspoon paprika

Salt and pepper to taste

2 tablespoons lime juice

Fresh cilantro, chopped (for garnish)

Optional: hot sauce for serving

Instructions
 

Prepare the Avocado Mash: In a medium bowl, scoop out the avocado flesh. Add lime juice, garlic powder, paprika, salt, and pepper. Mash the ingredients together until smooth and creamy. Adjust the seasoning to taste.

    Cook the Eggs: In a non-stick skillet over medium heat, crack the eggs. Stir gently and cook them to your desired doneness (scrambled or fried). If desired, season with salt and pepper.

      Assemble the Wrap: Lay the tortillas flat on a clean surface. Spread half of the avocado mixture on each tortilla. Layer with baby spinach leaves, cooked eggs, and halved cherry tomatoes.

        Fold the Wrap: Carefully fold in the sides of the tortilla and then roll from the bottom up, securing all the filling inside.

          Toast the Wrap (optional): For an extra crunch, place the wraps seam-side down in the skillet over medium heat for 1-2 minutes on each side until lightly golden.
