12 large portobello or baby bella mushrooms

1 cup fresh spinach, chopped

1 cup cream cheese, softened

1/2 cup grated Parmesan cheese

1/4 cup Italian breadcrumbs

2 cloves garlic, minced

1/2 teaspoon onion powder

1/4 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

1 tablespoon olive oil

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Mushrooms: Clean the mushrooms with a damp cloth and carefully remove the stems. Set the caps aside and finely chop the stems.

      Sauté Spinach: In a skillet over medium heat, add olive oil and minced garlic. Sauté for about 1 minute until fragrant. Add the chopped mushroom stems and spinach, cooking until the spinach is wilted and the mixture is slightly browned (about 3-4 minutes). Season with salt, pepper, and red pepper flakes if desired. Remove from heat and let cool.

        Mix Filling: In a mixing bowl, combine the sautéed spinach and mushroom stem mixture with softened cream cheese, grated Parmesan, Italian breadcrumbs, onion powder, and a pinch of salt and pepper. Mix until well combined.

          Stuff Mushrooms: Generously fill each mushroom cap with the spinach Parmesan mixture, pressing lightly to ensure it's packed in.

            Bake: Arrange the stuffed mushrooms on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the tops are golden.

              Garnish: Remove from the oven and let them cool for a few minutes. Sprinkle with fresh chopped parsley before serving.
