Stuffed Cucumber Tuna Bites

2 medium cucumbers, cut into 1-inch thick rounds

1 can (5 oz) tuna in water, drained and flaked

2 tablespoons mayonnaise

1 tablespoon Greek yogurt (optional for creaminess)

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

1 tablespoon chopped fresh dill (or 1 teaspoon dried dill)

1 tablespoon capers, rinsed and chopped

Salt and pepper, to taste

Cherry tomatoes, halved (for garnish)

Fresh dill sprigs (for garnish)

Instructions
 

Prepare the Cucumbers: Slice the cucumbers into 1-inch thick rounds and use a small melon baller or spoon to gently scoop out a portion of the flesh from the center of each round, creating a small cavity. Be careful not to scoop all the way through; you want the bottom to remain intact.

    Make the Tuna Filling: In a mixing bowl, combine the drained tuna, mayonnaise, Greek yogurt (if using), Dijon mustard, lemon juice, chopped dill, capers, salt, and pepper. Mix until well combined and the mixture is creamy.

      Stuff the Cucumber Rounds: Use a spoon or a piping bag to fill each cucumber round with the tuna mixture. Fill generously until the filling mounds slightly above the top of the cucumber.

        Garnish: Place a halved cherry tomato on top of each stuffed cucumber bite and add a small sprig of fresh dill for a pop of color and flavor.
