Stuffed Charcuterie Bell Peppers

4 medium bell peppers (any color)

1 cup cooked quinoa or rice

1/2 cup diced salami or prosciutto

1/2 cup diced sharp cheddar cheese

1/2 cup crumbled feta cheese

1/4 cup sliced black olives

1/4 cup chopped cherry tomatoes

2 tablespoons fresh parsley, chopped

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 tablespoon olive oil

Salt and pepper to taste

Optional: red pepper flakes for heat

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Carefully slice the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil and place them upright in a baking dish.

      Mix the Filling: In a large mixing bowl, combine the cooked quinoa or rice, salami or prosciutto, cheddar cheese, feta cheese, olives, cherry tomatoes, parsley, garlic powder, smoked paprika, and a pinch of salt and pepper. If you want some heat, sprinkle in red pepper flakes to taste. Stir until well combined.

        Stuff the Peppers: Generously fill each bell pepper with the charcuterie mixture, pressing down gently to pack it in.

          Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the tops are golden and slightly crisp.

            Serve: Remove from the oven and let them cool for a few minutes before serving. Garnish with extra parsley if desired.
