Strawberry Mojito Melts

Ingredients
  

2 cups fresh strawberries, hulled and sliced

1/2 cup fresh mint leaves, loosely packed

1/2 cup granulated sugar

1/4 cup freshly squeezed lime juice (about 2 limes)

1 cup coconut milk (full-fat for creaminess)

1 cup heavy cream

1 teaspoon pure vanilla extract

1/4 teaspoon salt

1 tablespoon rum (optional, for the mojito flavor)

Lime wedges and mint sprigs, for garnish

Instructions
 

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries with 1/4 cup of sugar. Toss well and let them macerate for about 15 minutes until they release their juices.

    Create the Mint Syrup: In a small saucepan over medium heat, combine 1/4 cup of sugar with 1/4 cup of water. Once the sugar dissolves, add the fresh mint leaves and bring to a gentle simmer. Let it simmer for about 5 minutes, then remove from heat and steep for an additional 10 minutes. Strain and discard the mint leaves.

      Mix the Base: In a large mixing bowl, combine the coconut milk, heavy cream, lime juice, vanilla extract, and salt. If using, add the rum for an extra kick. Whisk until everything is well combined and smooth.

        Incorporate Strawberries: Add the macerated strawberries (including their juices) to the coconut mix. Fold gently to distribute the strawberries evenly.

          Freeze the Mixture: Pour the mixture into silicone molds or ice cube trays. If you want to create a layering effect, you can first freeze the base for about 30 minutes before adding the strawberry layer on top. Insert popsicle sticks if using molds.

            Chill: Freeze for at least 4 to 6 hours, or until completely firm.

              Unmold and Serve: To remove the melts from the molds, run warm water over the outside of the molds for a few seconds. Carefully pull them out and arrange them on a serving platter.

                Garnish: Serve immediately, garnished with lime wedges and fresh mint sprigs. Enjoy the refreshing taste of strawberries and mojito in a delightful frozen treat!
