2 cups fresh strawberries, hulled and sliced

1 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon lemon zest

1 cup heavy whipping cream

1 cup mascarpone cheese

1 teaspoon vanilla extract

2 packs (14 oz each) of graham crackers

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries, granulated sugar, lemon juice, and lemon zest. Toss gently to coat and allow to sit for about 15 minutes, letting the juices develop.

    Make the Whipped Cream Mixture: In a separate large bowl, whip the heavy cream with an electric mixer on medium speed until soft peaks form. Slowly add in the mascarpone cheese, vanilla extract, and beat until well blended and firm peaks are achieved.

      Assemble the Cake: In a rectangular dish (9x13 inches works well), spread a thin layer of the whipped cream mixture on the bottom. Arrange a layer of graham crackers over the whipped cream, breaking them if necessary to fit.

        Layering: Spoon half of the strawberry mixture over the graham crackers, spreading it evenly. Top with another layer of the whipped cream mixture, followed by another layer of graham crackers.

          Repeat Layers: Repeat the process with the remaining strawberry mixture and whipped cream, finishing with a final layer of whipped cream on top. Smooth out the top layer with a spatula.

            Chill: Cover the dish with plastic wrap and refrigerate it for at least 4 hours, or ideally overnight. This will allow the graham crackers to soften and the flavors to meld together beautifully.

              Serve: Before serving, garnish with fresh mint leaves if desired and additional sliced strawberries on top for an extra pop of color.
