Ingredients

For the Danish Pastry:

2 cups all-purpose flour

1/4 cup granulated sugar

1/2 teaspoon salt

1 packet (2 1/4 teaspoons) active dry yeast

1/2 cup whole milk, warmed to 110°F

1/2 cup unsalted butter, cold and cubed

1 large egg, beaten

1 teaspoon vanilla extract

For the Strawberry Filling:

2 cups fresh strawberries, hulled and sliced

1/4 cup granulated sugar

1 tablespoon cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla extract

For the Glaze:

1 cup powdered sugar

2 teaspoons vanilla extract

2-3 tablespoons milk

Instructions

Prepare the Dough:

    - In a small bowl, dissolve the yeast in the warmed milk and allow it to foam for about 5 minutes.

      - In a large mixing bowl, combine the flour, sugar, and salt.

        - Add the yeast mixture, beaten egg, and vanilla extract to the dry ingredients. Mix until a dough forms.

          - Knead the dough on a lightly floured surface for about 5 minutes, until smooth. Shape it into a ball, cover, and let it rise in a warm place for 1 hour or until doubled in size.

            Incorporate the Butter:

              - On a floured surface, roll out the dough into a large rectangle about 1/2 inch thick.

                - Place the cold, cubed butter in the center of the rectangle. Fold the edges of the dough over the butter to encase it completely.

                  - Roll out the dough again into a rectangle and fold it into thirds like a letter, then wrap it in plastic wrap. Refrigerate for at least 30 minutes.

                    Make the Strawberry Filling:

                      - In a medium saucepan, combine the sliced strawberries, sugar, cornstarch, lemon juice, and vanilla extract.

                        - Cook over medium heat until the strawberries soften and the mixture thickens, about 5-7 minutes. Remove from heat and let cool.

                          Shape the Danish:

                            - Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

                              - On a floured surface, roll out the chilled pastry dough into a large rectangle again and cut it into 4 smaller squares.

                                - Make cuts in each corner of the squares about 2 inches into the dough and leave the center uncut.

                                  - Place a spoonful of the strawberry filling in the center of each square. Fold the corners of the squares toward the center over the filling, pressing to seal.

                                    Bake the Danishes:

                                      - Place the prepared Danishes on the lined baking sheet. Brush the tops with a little beaten egg for a golden finish.

                                        - Bake for 20-25 minutes or until they are golden and puffed.

                                          Prepare the Glaze:

                                            - In a small bowl, whisk together the powdered sugar, vanilla extract, and enough milk to reach a smooth, drizzling consistency.

                                              Finish Off:

                                                - Once the Danishes are out of the oven, let them cool slightly before drizzling the glaze on top. Enjoy warm or at room temperature!
