200g rice noodles

2 tablespoons vegetable oil

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 bell pepper, sliced (red or yellow for color)

1 cup broccoli florets

1 cup snap peas, trimmed

1 carrot, julienned

3 green onions, chopped

¼ cup soy sauce

2 tablespoons hoisin sauce

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon chili paste (adjust to taste)

Sesame seeds, for garnish

Fresh cilantro, for garnish

Cook the Noodles: Begin by cooking the rice noodles according to package instructions. Once cooked, drain and rinse with cold water to prevent sticking. Set aside.

    Prepare the Sauce: In a small bowl, whisk together soy sauce, hoisin sauce, sesame oil, rice vinegar, and chili paste. This will be your sticky sauce.

      Sauté Aromatics: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.

        Add Vegetables: Toss in the bell pepper, broccoli florets, snap peas, and carrot. Stir-fry for 5-7 minutes, or until the vegetables are vibrant and tender-crisp.

          Combine Noodles and Sauce: Add the cooked noodles to the skillet, then pour the sauce over the top. Gently toss everything together, ensuring the noodles and vegetables are evenly coated with the sauce. Stir-fry for an additional 2-3 minutes until everything is heated through and glossy.

            Finish and Serve: Remove from heat and mix in chopped green onions. Give it a final toss, then plate the stir fry. Garnish with sesame seeds and fresh cilantro before serving.
