1 sheet of frozen puff pastry, thawed

2 cups fresh spinach, chopped

1 cup mozzarella cheese, shredded

1/4 cup cream cheese, softened

1/4 cup grated Parmesan cheese

1 clove garlic, minced

1/2 teaspoon onion powder

1/4 teaspoon nutmeg

Salt and pepper to taste

1 egg, beaten (for egg wash)

Sesame seeds (optional, for topping)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Filling: In a large skillet over medium heat, add a little olive oil and sauté minced garlic until fragrant (about 1 minute). Add the chopped spinach and cook until wilted (about 3-4 minutes). Remove from heat and let it cool slightly.

      Mix the Ingredients: In a mixing bowl, combine the cooked spinach, mozzarella cheese, cream cheese, Parmesan cheese, onion powder, nutmeg, salt, and pepper. Stir until well-mixed and set aside.

        Prepare the Puff Pastry: Lightly flour a clean surface and roll out the thawed puff pastry sheet to smooth out any creases. Cut it into 2-inch squares or circles, depending on your preference.

          Assemble the Bites: Place about a tablespoon of the spinach and cheese mixture in the center of each pastry square. Fold the edges over to create a pocket and pinch to seal. Place them seam-side down on the prepared baking sheet.

            Add Egg Wash: Brush the tops of the pastry bites with the beaten egg to give them a golden finish. Sprinkle with sesame seeds if desired for added crunch.
