Spinach and Feta Stuffed Shells

Ingredients
  

20 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1/2 cup feta cheese, crumbled

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1/4 teaspoon nutmeg

Salt and pepper, to taste

2 cups marinara sauce

1 teaspoon olive oil

Fresh basil leaves, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta Shells: In a large pot of salted boiling water, cook the jumbo shells according to package instructions until al dente. Drain and let cool.

      Prepare the Filling: In a skillet over medium heat, heat olive oil. Add the minced garlic and sauté for about 1 minute until fragrant. Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

        Mix the Cheese Filling: In a large mixing bowl, combine the ricotta, feta, Parmesan, and egg. Add the wilted spinach mixture, nutmeg, salt, and pepper. Mix until well combined.

          Stuff the Shells: Take each cooked shell and fill it generously with the spinach and cheese mixture, using a spoon or a piping bag for ease.

            Assemble the Dish: Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish. Arrange the stuffed shells in a single layer on top of the sauce. Pour the remaining marinara sauce over the shells.

              Bake: Cover the dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the sauce is bubbly and the cheese is slightly golden.

                Garnish and Serve: Remove from the oven and allow to cool for a few minutes. Garnish with fresh basil leaves before serving.
