Spinach and Egg Tortilla Bake

6 large eggs

1 cup milk (whole or skim)

2 cups fresh spinach, chopped

1 cup corn tortillas, cut into quarters

1 cup shredded cheese (cheddar or a blend)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon olive oil

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika (optional)

Fresh herbs for garnish (e.g., cilantro or parsley)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray.

    Sauté Aromatics: In a skillet, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant. Remove from heat.

      Prepare the Egg Mixture: In a large bowl, whisk together the eggs and milk until well combined. Add salt, black pepper, and paprika (if using) to the mixture.

        Combine Ingredients: To the egg mixture, add the sautéed onion and garlic, chopped spinach, and half of the shredded cheese. Stir until everything is well incorporated.

          Layer the Tortillas: In the greased baking dish, layer half of the tortilla quarters on the bottom, overlapping them slightly. Pour half of the egg and spinach mixture over the tortillas. Repeat this process with the remaining tortillas and egg mixture.
