8 large eggs

1 cup milk (dairy or plant-based)

1 cup shredded cheese (cheddar, mozzarella, or your choice)

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon olive oil

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika (optional)

1 cup diced tomatoes (fresh or canned, drained)

Fresh herbs for garnish (like parsley or chives)

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with a light coating of cooking spray or olive oil.

    Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing for about 3-4 minutes until the onion becomes translucent and fragrant.

      Cook the Spinach: Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

        Whisk the Eggs: In a large mixing bowl, crack the eggs and whisk them together with the milk, salt, pepper, and paprika until well combined.

          Combine Ingredients: Stir the sautéed spinach mixture, diced tomatoes, and half of the shredded cheese into the egg mixture. Ensure everything is evenly distributed.
