Spicy Watermelon Sliders

4 cups seedless watermelon, cut into 1-inch thick slices

1/4 cup feta cheese, crumbled

1/4 cup fresh mint leaves, chopped

1/4 teaspoon cayenne pepper (adjust to taste)

1 tablespoon balsamic glaze

1 tablespoon extra virgin olive oil

Salt and pepper, to taste

8 mini slider buns (or lettuce wraps for gluten-free)

1 small avocado, sliced

1/4 cup pickled red onions (optional)

Fresh arugula, for topping

Prepare the Watermelon: Start by cutting the watermelon into thick slices, about 1 inch each. Use a cookie cutter or a sharp knife to cut out circular pieces that fit the slider buns. Pat them dry with paper towels to remove excess moisture.

    Season the Watermelon: In a small bowl, mix together the olive oil, cayenne pepper, salt, and pepper. Brush this mixture onto both sides of the watermelon slices.

      Grill the Watermelon: Preheat a grill or grill pan over medium heat. Place the seasoned watermelon slices on the grill and cook for 2-3 minutes on each side until grill marks appear and watermelon is warmed through. Remove from heat.

        Assemble the Sliders: For each slider, place a grilled watermelon slice on the bottom half of a slider bun. Top with crumbled feta cheese, a few pieces of sliced avocado, and some pickled red onions (if using). Add a sprinkle of chopped mint.
