1 tablespoon rice vinegar

1 tablespoon lime juice (freshly squeezed)

1-2 tablespoons honey or maple syrup (adjust for sweetness)

1-2 teaspoons sriracha sauce (adjust for heat)

1/4 cup warm water (to thin the sauce)

Vegetables:

1 cup shredded carrots

1 bell pepper (sliced thinly; choose your favorite color)

1 cup broccoli florets

1 cup snap peas

3 scallions (sliced thin)

1/4 cup fresh cilantro (chopped)

Toppings:

Chopped peanuts (for garnish)

Lime wedges (for serving)

Extra sriracha (optional)

Instructions
 

Cook the Noodles:

    - Bring a large pot of salted water to a boil. Add the rice noodles and cook according to package instructions until al dente. Drain, rinse with cold water to stop cooking, and set aside.

      Make the Peanut Sauce:
