Spicy Tahini Chickpea Lettuce Wraps

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini

2 tablespoons olive oil

2 tablespoons lemon juice

2 teaspoons maple syrup or honey

1-2 tablespoons sriracha (adjust to taste)

2 garlic cloves, minced

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 head of butter lettuce or romaine, leaves separated

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely diced

Fresh cilantro or parsley, for garnish

Optional: 1 avocado, sliced

Instructions
 

Prepare the Chickpeas: In a large bowl, mash the drained chickpeas with a fork or potato masher until you achieve a chunky texture. Leave some chickpeas whole for added texture.

    Make the Spicy Tahini Sauce: In a separate small bowl, whisk together the tahini, olive oil, lemon juice, maple syrup or honey, sriracha, minced garlic, ground cumin, smoked paprika, salt, and pepper. Adjust the heat by adding more or less sriracha according to your preference.

      Combine: Add the spicy tahini sauce to the mashed chickpeas and mix until fully incorporated. Taste and adjust seasoning if necessary.

        Prepare the Lettuce Wraps: Lay out the lettuce leaves on a serving platter or individual plates.

          Assemble the Wraps: Spoon a generous amount of the spicy tahini chickpea mixture into each lettuce leaf. Top with halved cherry tomatoes, diced red onion, and, if using, avocado slices.

            Garnish: Sprinkle fresh cilantro or parsley over the wraps for an added freshness and flavor boost.
