Spicy Crispy Chickpea Lettuce Cups

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon cayenne pepper (adjust to taste)

1/2 teaspoon garlic powder

Salt and pepper to taste

1 head of butter or romaine lettuce, leaves separated

1 medium avocado, diced

1/2 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

1 lime, juiced

Optional: 1/4 cup feta cheese or vegan feta for topping

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Prepare the Chickpeas: In a bowl, toss the drained chickpeas with olive oil, smoked paprika, cumin, cayenne pepper, garlic powder, salt, and pepper until evenly coated.

      Roast the Chickpeas: Spread the chickpeas on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, stirring halfway through until they are golden and crispy.

        Prepare the Lettuce Cups: While the chickpeas are roasting, prepare your lettuce cups. Gently rinse and dry each leaf, creating a “cup” shape.

          Make the Filling: In a bowl, combine the diced avocado, cherry tomatoes, chopped cilantro, lime juice, and a pinch of salt. Mix gently to avoid mashing the avocado.

            Assemble the Cups: Once the chickpeas are roasted and crispy, take them out of the oven and let them cool slightly. Spoon the avocado and tomato mixture into each lettuce cup, then top with the spicy crispy chickpeas.
