Ingredients

For the Fruit Filling:

4 cups mixed berries (such as blueberries, raspberries, and blackberries)

1 cup fresh diced peaches (or canned, drained)

1/2 cup granulated sugar (adjust based on fruit sweetness)

1 tablespoon cornstarch

1 teaspoon ground cinnamon

1/4 teaspoon cayenne pepper (more if you like it spicier)

Zest and juice of 2 limes

1 tablespoon vanilla extract

For the Biscuit Topping:

2 cups all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon cayenne pepper

1/2 cup unsalted butter, cold and cubed

3/4 cup buttermilk (or milk with 1 tablespoon vinegar/lemon juice added)

For Finish:

Lime zest for garnish

Optional vanilla ice cream or whipped cream for serving

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Fruit Filling:

      - In a large mixing bowl, combine the mixed berries and diced peaches.

        - Add the sugar, cornstarch, cinnamon, cayenne pepper, lime juice, lime zest, and vanilla extract.

          - Gently stir together until the fruit is coated and the mixture is well combined. Let it sit for 10-15 minutes to allow the flavors to meld.

            Make the Biscuit Topping:

              - In another bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cayenne pepper.

                - Cut in the cold cubed butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.

                  - Pour in the buttermilk and stir gently just until the dough comes together. Do not overmix; it should be a little lumpy.

                    Assemble the Cobbler:

                      - Transfer the fruit mixture to a greased 9x13-inch baking dish, spreading it evenly.

                        - Drop spoonfuls of the biscuit topping over the fruit. It’s okay if it’s a little uneven; it will spread as it bakes.

                          Bake the Cobbler:

                            - Place the baking dish in the preheated oven and bake for about 30-35 minutes, or until the biscuit topping is golden brown and the fruit is bubbling.

                              Cool and Serve:

                                - Let the cobbler cool for about 10 minutes after removing it from the oven.

                                  - Serve warm, garnished with lime zest, and a scoop of vanilla ice cream or whipped cream if desired.
