2 cans (15 oz each) black beans, rinsed and drained

1 medium onion, diced

3 cloves garlic, minced

1 medium red bell pepper, diced

1 medium jalapeño, seeded and finely chopped

1 tablespoon olive oil

4 cups vegetable broth

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

Salt and black pepper to taste

1 tablespoon lime juice

Fresh cilantro, chopped (for garnish)

Avocado slices (for garnish)

Sour cream or Greek yogurt (optional, for garnish)

Instructions
 

Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened. Stir in the minced garlic, diced red bell pepper, and chopped jalapeño, cooking for another 3-4 minutes until everything is aromatic and tender.

    Add Spices: Sprinkle in the ground cumin, smoked paprika, and cayenne pepper. Stir well to coat the vegetables with the spices, cooking for an additional minute to toast the flavors.
