Spicy BBQ Veggie Tacos

For the Spicy BBQ Sauce:

1 cup ketchup

2 tablespoons apple cider vinegar

2 tablespoons brown sugar

1 tablespoon soy sauce

1 tablespoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

For the Veggie Filling:

1 medium zucchini, diced

1 bell pepper (any color), diced

1 cup corn (fresh or frozen)

1 cup black beans, rinsed and drained

1 small red onion, finely chopped

2 garlic cloves, minced

1 tablespoon olive oil

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

To Serve:

8 small corn or flour tortillas

Fresh cilantro, chopped

Avocado slices

Lime wedges

Diced jalapeños (optional)

Make the Spicy BBQ Sauce:

    - In a medium saucepan over medium heat, combine ketchup, apple cider vinegar, brown sugar, soy sauce, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. Stir well to combine.

      - Allow the mixture to simmer for about 10 minutes, stirring occasionally until it thickens slightly. Remove from heat and set aside.

        Prepare the Veggie Filling:

          - In a large skillet, heat the olive oil over medium heat. Add the chopped red onion and garlic, sautéing for 2-3 minutes until fragrant and translucent.

            - Add the diced zucchini, bell pepper, corn, black beans, cumin, smoked paprika, salt, and pepper. Sauté for about 5-7 minutes or until the vegetables are tender but still crisp.

              Combine with BBQ Sauce:
