1/4 cup unsalted butter

1 tablespoon sugar

2 large eggs

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

For the Cinnamon-Sugar Coating:

1/2 cup granulated sugar

1 tablespoon ground cinnamon

Pinch of salt

For Serving:

Chocolate sauce or dulce de leche for dipping

Prepare the Batter: In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat, stirring until the butter melts. Remove from heat, and add in flour, baking powder, cinnamon, and nutmeg. Stir until well combined and a dough forms.

    Incorporate Eggs: Let the mixture cool slightly, then add the eggs one at a time, stirring well after each addition until fully incorporated. The dough should be smooth and somewhat sticky.

      Preheat Waffle Maker: Preheat your waffle maker according to its instructions. If it requires greasing, brush it lightly with oil or butter.

        Cook the Waffle Sticks: Spoon the churro batter into a piping bag or a zip-top bag with the corner cut off. Squeeze the batter into the preheated waffle maker, filling it with rows of batter without overcrowding. Close the waffle maker and cook for about 3–5 minutes or until golden brown and cooked through.

          Prepare Cinnamon-Sugar Coating: While the churro waffle sticks are cooking, mix the sugar, cinnamon, and pinch of salt in a shallow dish.
