Ingredients

1 cup rolled oats

1/2 cup almond flour

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1 cup finely grated carrots (about 2 medium carrots)

1/2 cup pitted dates, chopped

1/4 cup unsweetened shredded coconut

1/4 cup chopped walnuts or pecans

1/4 cup maple syrup or honey

1 teaspoon vanilla extract

Instructions

Prepare the Ingredients: Start by finely grating the carrots and chopping the pitted dates. Make sure your nuts are coarsely chopped and ready to go.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, ground cinnamon, nutmeg, ground ginger, and salt. Stir until well mixed.

Combine Wet Ingredients: In another bowl, mix the grated carrots, chopped dates, shredded coconut, chopped walnuts (or pecans), maple syrup (or honey), and vanilla extract. Stir until everything is evenly combined.

Combine Mixtures: Gradually add the wet mixture to the dry ingredients, stirring well to ensure all components are evenly distributed. The mixture should be sticky and hold together when pressed.

Form Energy Bites: Using your hands, take small portions of the mixture (about 1 tablespoon) and roll them into bite-sized balls. Place them on a plate or a lined baking sheet.

Chill: Cover the plate and refrigerate the energy bites for at least 30 minutes, allowing them to firm up.

Serve and Store: Once chilled, enjoy your Spiced Carrot Cake Energy Bites as a healthy snack! Store any leftovers in an airtight container in the refrigerator for up to a week.
