1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

¼ tsp ground nutmeg

¼ tsp ground allspice

¾ cup granulated sugar

½ cup unsalted butter, melted and slightly cooled

2 large eggs

1 tsp vanilla extract

¾ cup buttermilk

1 ½ cups peeled and diced apples (about 2 medium apples, tart varieties like Granny Smith work well)

½ cup chopped walnuts or pecans (optional)

3 tbsp brown sugar (for topping)

1 tsp cinnamon (for topping)

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with cooking spray.

    Combine Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice until well combined.

      Mix Wet Ingredients: In another bowl, combine the granulated sugar and melted butter. Mix in the eggs one at a time, ensuring each egg is fully incorporated before adding the next. Stir in the vanilla extract and buttermilk.

        Blend Wet and Dry: Pour the wet ingredients into the dry ingredients and gently fold them together with a spatula until just combined. Be careful not to overmix; it’s okay if the batter is a bit lumpy.

          Add Apples and Nuts: Fold in the diced apples and nuts (if using) until evenly distributed throughout the batter.
