Speedy Lemon Garlic Shrimp with Zoodles

1 pound large shrimp, peeled and deveined

4 medium zucchinis, spiralized into zoodles

4 cloves garlic, minced

1 lemon (zested and juiced)

3 tablespoons olive oil

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional, for serving)

Instructions
 

Prep the Zoodles: Use a spiralizer to create zoodles from the zucchinis. If you don’t have a spiralizer, you can use a julienne peeler or a vegetable peeler to create thin strips.

    Cook the Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

      Season the Shrimp: Add the shrimp to the skillet, along with the red pepper flakes, salt, and pepper. Cook the shrimp for about 2-3 minutes on one side, until it starts to turn pink.

        Flip and Flavor: Flip the shrimp and pour in the lemon juice and zest. Cook for another 1-2 minutes, until the shrimp are fully cooked and opaque. Remove the skillet from heat.

          Cook the Zoodles: In a separate pan, heat the remaining tablespoon of olive oil over medium heat. Add the zoodles and sauté for 2-3 minutes, or until just tender but still slightly crunchy. Season with salt and pepper to taste.

            Combine: Once the zoodles are cooked, add the shrimp along with any juices from the skillet into the pan with the zoodles. Toss gently to combine everything together evenly.

              Serve: Divide the zoodles and shrimp mixture into bowls. Garnish with chopped fresh parsley and a sprinkle of grated Parmesan cheese if desired. Enjoy immediately!
