Ingredients

2 medium zucchinis, spiralized

1 lb boneless, skinless chicken breast, cut into bite-sized pieces

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and pepper to taste

1 teaspoon Italian seasoning

Fresh parsley, chopped (for garnish)

Optional: red pepper flakes for heat

Instructions

Prepare the Zucchini Noodles:

    - Using a spiralizer, turn the zucchinis into noodles. Set aside.

      Cook the Chicken:

        - In a large skillet, heat olive oil over medium-high heat.

          - Add the chicken pieces, seasoning them with salt, pepper, and Italian seasoning.

            - Sauté for about 5-7 minutes until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.

              Make the Alfredo Sauce:

                - In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant.

                  - Pour in the heavy cream, bringing it to a gentle simmer.

                    - Gradually whisk in the grated Parmesan cheese until the sauce is creamy and well combined. Continue to cook for another 2-3 minutes, allowing the sauce to thicken slightly. Adjust the seasoning if necessary.

                      Combine Ingredients:

                        - Return the cooked chicken to the skillet with the Alfredo sauce, and mix well to coat the chicken in the sauce.

                          - Add the spiralized zucchini noodles to the pan, tossing everything together gently for about 2-3 minutes, until the noodles are just tender but still crisp. Be careful not to overcook the zucchini, as it can become mushy.

                            Serve:

                              - Plate the Speedy Chicken Alfredo with Zucchini Noodles in bowls.

                                - Garnish with freshly chopped parsley and a sprinkle of red pepper flakes if desired for an extra kick. Enjoy your quick, delicious dinner!
