400g spaghetti

6 cloves garlic, thinly sliced

120ml extra virgin olive oil

1 teaspoon red pepper flakes (adjust to taste)

1/2 cup fresh parsley, chopped

Salt, to taste

Freshly grated Parmigiano-Reggiano (optional)

Zest of 1 lemon (optional)

Cook the Spaghetti:

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of the pasta water, then drain the spaghetti and set aside.

      Prepare the Garlic Oil:

        In a large skillet, heat the extra virgin olive oil over medium heat. Add the thinly sliced garlic and cook gently, stirring frequently, until the garlic turns golden brown and becomes fragrant (about 2-3 minutes). Be careful not to burn the garlic, as it can turn bitter.
