2 large chicken breasts

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

4 whole wheat or spinach tortillas

1 cup shredded romaine lettuce

1 cup diced tomatoes

1/2 cup corn (canned or frozen)

1/2 cup black beans (canned, drained, and rinsed)

1 avocado, sliced

1/2 cup shredded cheese (cheddar or Mexican blend)

1/4 cup fresh cilantro, chopped

1/2 cup ranch dressing or Southwest dressing

Instructions
 

Prepare the Chicken: In a large bowl, mix together the olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Add the chicken breasts and ensure they're coated evenly in the spice mixture. Let marinate for at least 20 minutes, or up to 2 hours in the refrigerator for more flavor.

    Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Place the marinated chicken on the grill and cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let the chicken rest for 5 minutes before slicing into thin strips.

      Prepare the Wraps: Lay out the tortillas on a clean surface. Start by placing a generous handful of shredded lettuce in the center of each tortilla. Add diced tomatoes, corn, black beans, avocado slices, and grilled chicken strips on top.

        Add Cheese and Dressing: Sprinkle shredded cheese and fresh cilantro over the toppings. Drizzle with ranch or Southwest dressing according to your taste.

          Wrap It Up: Fold the sides of the tortilla inwards, then roll from the bottom up to form a tight wrap. Repeat for all tortillas.
