1 lb ground chicken

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon lime juice

1 cup shredded cheddar cheese

1 avocado, diced

1 bunch fresh cilantro, chopped

1 head of butter lettuce or romaine leaves (for wrapping)

Instructions
 

Sauté the Chicken: In a large skillet over medium heat, heat the olive oil. Add the finely chopped onion and minced garlic, sautéing until the onion is translucent (about 3-4 minutes).

    Cook the Chicken: Add the ground chicken to the skillet, breaking it apart with a wooden spoon. Cook until browned and no longer pink, about 5-7 minutes.

      Add Vegetables and Spices: Stir in the diced red bell pepper, black beans, corn, chili powder, cumin, smoked paprika, salt, and pepper. Cook for another 5-6 minutes until the vegetables are tender.

        Add Lime Juice: Remove the skillet from heat and stir in the lime juice. Taste and adjust seasoning as needed.

          Assemble the Wraps: To serve, take a lettuce leaf and fill it with a generous spoonful of the chicken mixture. Top with shredded cheddar cheese, diced avocado, and fresh cilantro.
