Ingredients

4 bone-in pork chops (about 1 inch thick)

Salt and pepper, to taste

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon dried thyme

2 tablespoons olive oil

1 medium onion, thinly sliced

2 cloves garlic, minced

1 cup low-sodium chicken broth

1 tablespoon Worcestershire sauce

2 tablespoons all-purpose flour

1 tablespoon butter

Fresh parsley, chopped, for garnish

Instructions

Season the Pork Chops: Pat the pork chops dry with paper towels. Season both sides with salt, pepper, garlic powder, paprika, and thyme.

Sear the Pork Chops: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork chops and cook for about 4-5 minutes on each side or until they are golden brown. Remove the chops from the skillet and set aside.

Sauté the Onions: In the same skillet, add the sliced onion. Cook for about 5-7 minutes, stirring occasionally, until they are translucent and beginning to caramelize. Add the minced garlic and cook for an additional minute.

Create the Gravy Base: Sprinkle the flour over the onions, stirring well to incorporate. Cook for another 1-2 minutes to eliminate the raw flour taste. Gradually pour in the chicken broth, stirring constantly to avoid lumps. Add in the Worcestershire sauce and mix well.

Simmer the Pork Chops: Return the pork chops to the skillet, ensuring they are submerged in the gravy. Reduce the heat to low, cover, and let simmer for 20-25 minutes, or until the pork is cooked through and tender (145°F internal temperature).

Finish the Sauce: Once the pork is cooked, remove the chops again and set aside. Stir in the butter into the gravy for richness. Taste and adjust seasoning if necessary.

Serve: Place the pork chops on serving plates and generously spoon the onion gravy over the top. Garnish with chopped fresh parsley.

Enjoy: Serve hot, paired with mashed potatoes, rice, or bread to soak up the delicious onion gravy!
