4 medium-sized russet potatoes

3 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust for spice preference)

1 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Optional: Dipping sauce (such as spicy mayo or garlic aioli)

Prepare the Potatoes: Preheat your oven to 425°F (220°C). Wash and scrub the potatoes thoroughly to remove any dirt. Pat them dry with a kitchen towel.

    Cut the Wedges: Slice each potato in half lengthwise, then cut each half into 4-6 wedges depending on the size you prefer. Aim for uniform sizes to ensure even cooking.

      Make the Spice Mix: In a large mixing bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Stir until well blended.

        Coat the Potatoes: Add the potato wedges to the bowl and toss them gently with the spice mixture until they’re evenly coated. Make sure each wedge has a good covering of the spices.

          Arrange on Baking Sheet: Line a baking sheet with parchment paper for easy cleanup. Spread the coated potato wedges in a single layer, ensuring there is enough space between them for even roasting.
