1 lb Brussels sprouts, trimmed and halved

6 slices of thick-cut bacon, chopped

3 tablespoons pure maple syrup

1 tablespoon balsamic vinegar

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons olive oil

1 tablespoon Dijon mustard (optional, for a tangy twist)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Remove from the skillet and let drain on paper towels, leaving the bacon fat in the skillet.

      Sauté Brussels Sprouts: In the same skillet with the bacon fat, add the halved Brussels sprouts. Toss to coat them in the fat and sauté for about 5 minutes, stirring occasionally.

        Mix Sauce: In a small bowl, whisk together maple syrup, balsamic vinegar, smoked paprika, garlic powder, salt, black pepper, and olive oil. If you like a hint of tang, add the Dijon mustard.

          Combine: Pour the maple mixture over the Brussels sprouts in the skillet, and stir to coat well. Add the crispy bacon back into the skillet, mixing everything together.

            Roast: Transfer the mixture to a roasting pan or keep it in the skillet if it's oven-safe. Spread it out evenly and roast in the preheated oven for about 20-25 minutes, or until the Brussels sprouts are tender and caramelized, stirring halfway through.

              Finish & Serve: Once done, take the Brussels sprouts out of the oven and let them cool slightly. Drizzle any remaining sauce from the bottom of the pan over the sprouts and sprinkle fresh parsley on top for garnish. Serve warm as a delicious side dish that’s bursting with flavor!
