1 pound Brussels sprouts, trimmed and halved

6 slices of thick-cut bacon, chopped

2 tablespoons pure maple syrup

1 teaspoon smoked paprika

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste

1/4 cup fresh parsley, chopped (for garnish)

Optional: 1/4 cup grated Parmesan cheese

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Brussels Sprouts: In a large mixing bowl, combine the halved Brussels sprouts with olive oil, smoked paprika, garlic powder, salt, and pepper. Toss to ensure all sprouts are well-coated.

      Cook Bacon: In a large skillet over medium heat, cook the chopped bacon until it's crispy, about 8-10 minutes. Remove the bacon with a slotted spoon and let it drain on paper towels. Reserve about 1 tablespoon of the drippings in the pan.

        Sauté Brussels: In the same skillet with reserved drippings, add the seasoned Brussels sprouts cut-side down. Sauté for about 5 minutes on medium-high heat until they begin to caramelize.

          Add Maple and Bacon: Transfer the sautéed Brussels sprouts to a large baking sheet. Drizzle with maple syrup and top with the crispy bacon. Toss gently to combine.

            Roast in Oven: Spread the Brussels sprouts evenly on the baking sheet and roast in the preheated oven for 20-25 minutes, stirring halfway through, until the Brussels sprouts are tender and caramelized.

              Serve and Garnish: Once done, remove from the oven and sprinkle with fresh parsley and, if using, grated Parmesan cheese. Serve warm as a delightful side dish!
