Ingredients

4 slices of sourdough bread

200g smoked salmon

1 ripe avocado

100g cream cheese (plain or herbed)

1 tablespoon lemon juice

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon capers, drained

Salt and black pepper, to taste

Optional toppings: red onion slices, radish slices, microgreens

Instructions

Toast the Bread: Start by toasting the sourdough slices until they are golden brown and crispy. This will provide a sturdy base for your toppings.

Prepare the Avocado Spread: While the bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork, adding the lemon juice, salt, and black pepper to taste. Mix until creamy but still slightly chunky.

Spread the Cream Cheese: Once the toast is ready, spread a generous layer of cream cheese on each slice of toast. This will create a creamy foundation beneath the toppings.

Layer the Avocado: Spoon the mashed avocado evenly onto the cream cheese-covered toast, spreading it out gently.

Add the Smoked Salmon: Place slices of smoked salmon on top of the avocado layer, arranging them as desired for visual appeal.

Garnish: Sprinkle the chopped dill and capers over the salmon. If you’re using optional toppings, add thin slices of red onion and radish, along with a few microgreens for a fresh crunch.

Serve: Finish with a light sprinkle of extra black pepper and a dash of lemon juice if desired. Serve the smoked salmon toast immediately for the best texture.
