200g spaghetti or fettuccine

150g smoked salmon, cut into strips

3 large eggs

100ml heavy cream

50g grated Parmesan cheese, plus extra for serving

1 clove garlic, minced

1 tablespoon olive oil

Salt and freshly ground black pepper, to taste

Fresh dill or chives for garnish (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti or fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Prepare the Sauce: In a mixing bowl, whisk together the eggs, heavy cream, and grated Parmesan cheese. Season with a pinch of salt and freshly ground black pepper. Set aside.

      Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes, until fragrant but not browned.

        Combine Pasta and Sauce: Reduce the heat to low. Add the drained pasta to the skillet with the garlic, tossing to coat in the oil. Pour the egg and cream mixture over the pasta, quickly tossing to combine. The residual heat will cook the eggs gently, creating a creamy sauce.
