Ingredients

1 lb Brussels sprouts, trimmed and halved

4 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon sea salt

½ teaspoon freshly cracked black pepper

1 teaspoon smoked paprika (or regular paprika for a milder flavor)

1 tablespoon balsamic vinegar

2 tablespoons grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). This high heat will help the Brussels sprouts get crispy.

Cook the Brussels Sprouts: Bring a large pot of salted water to a boil. Add the halved Brussels sprouts and boil for about 5 minutes, until they are tender but not fully cooked. Drain and let them cool slightly.

Smash the Sprouts: Once cooled, place each Brussels sprout half on a baking sheet lined with parchment paper. Using a fork or the bottom of a glass, gently press down on each half to flatten them slightly, creating a smashed effect.

Prepare the Garlic Sauce: In a small bowl, whisk together the minced garlic, olive oil, sea salt, black pepper, smoked paprika, and balsamic vinegar.

Coat the Sprouts: Drizzle the garlic mixture over the smashed Brussels sprouts, ensuring they are evenly coated. Use a spatula to toss them gently if needed.

Roast the Sprouts: Place the baking sheet in the preheated oven and roast the Brussels sprouts for 20-25 minutes, or until they are golden brown and crispy on the edges. Make sure to toss them halfway through for even cooking.

Add Cheese (Optional): If using Parmesan cheese, sprinkle it over the Brussels sprouts during the last 5 minutes of roasting, allowing it to melt and crisp up slightly.

Garnish and Serve: Once done, remove them from the oven and let them cool slightly. Garnish with freshly chopped parsley before serving. Enjoy your deliciously crispy smashed Brussels sprouts warm!
