Ingredients

1 lb boneless, skinless chicken breasts

1 can (15 oz) white beans (like cannellini or great northern), drained and rinsed

1 can (4 oz) diced green chilies

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup corn (frozen or canned)

2 cups chicken broth

1 tsp ground cumin

1 tsp chili powder

1/2 tsp oregano

1/4 tsp cayenne pepper (adjust to taste)

Salt and pepper to taste

1 cup heavy cream or sour cream (for a lighter option, use Greek yogurt)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Optional toppings: avocado slices, shredded cheese, tortilla strips

Instructions

Prep the Chicken: Place the boneless chicken breasts at the bottom of the slow cooker.

Combine Ingredients: In a mixing bowl, combine the white beans, diced green chilies, chopped onion, minced garlic, corn, chicken broth, cumin, chili powder, oregano, and cayenne pepper. Season with salt and pepper. Mix until everything is evenly distributed.

Pour Mixture: Carefully pour the mixture over the chicken breasts in the slow cooker, ensuring the chicken is well submerged.

Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours. The chicken should be tender and easy to shred.

Shred Chicken: Once cooked, remove the chicken breasts and shred them using two forks. Return the shredded chicken back into the slow cooker.

Add Cream: If using heavy cream or sour cream, stir it in now. For Greek yogurt, you can add it later when serving to keep it fresh.

Final Seasoning: Taste the chili and adjust the seasonings if needed, adding more salt, pepper, or cayenne depending on your heat preference.

Serve: Ladle the white chicken chili into bowls. Top with fresh chopped cilantro and serve with lime wedges and your choice of optional toppings like avocado, cheese, or tortilla strips.
