2 medium sweet potatoes, peeled and diced

1 cup green or brown lentils, rinsed

1 medium onion, chopped

3 cloves garlic, minced

2 carrots, diced

1 bell pepper (red or yellow), chopped

4 cups vegetable broth

1 can (14.5 oz) diced tomatoes (with juice)

2 tsp ground cumin

1 tsp smoked paprika

1/2 tsp ground coriander

1/2 tsp turmeric

1/4 tsp red pepper flakes (optional for heat)

Salt and black pepper to taste

2 cups kale or spinach, roughly chopped

2 tbsp olive oil

Fresh parsley or cilantro for garnish (optional)

Instructions
 

Prepare the Vegetables: Begin by prepping all vegetables. Peel and dice the sweet potatoes, chop the onion, mince the garlic, and dice the carrots and bell pepper.

    Sauté Aromatics: In a skillet over medium heat, add the olive oil. Once hot, add the chopped onion and garlic. Sauté for about 3-4 minutes, until the onion is translucent and fragrant.

      Combine Ingredients in Slow Cooker: Transfer the sautéed onion and garlic to your slow cooker. Add the diced sweet potatoes, carrots, bell pepper, rinsed lentils, vegetable broth, diced tomatoes, and all spices (cumin, smoked paprika, coriander, turmeric, and red pepper flakes if using). Stir well to combine all ingredients.

        Slow Cook the Stew: Cover the slow cooker and set it to cook on low for 6-8 hours or on high for 3-4 hours. Stir occasionally if possible, though it is not necessary.

          Add Greens: About 30 minutes before serving, stir in the chopped kale or spinach. Cover and allow the greens to wilt and soften.
