Ingredients

1.5 pounds of whole cremini mushrooms (or baby bella mushrooms)

1/2 cup (1 stick) unsalted butter, cubed

6 cloves of garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon fresh parsley, chopped (for garnish)

Salt and pepper, to taste

1 tablespoon soy sauce (optional for added umami)

1 teaspoon lemon juice (for brightness)

Instructions

Prep the Mushrooms: Clean the mushrooms by wiping them with a damp paper towel to remove any dirt. Avoid rinsing under water as mushrooms can absorb moisture, which can affect their texture during cooking.

Layer Ingredients in the Slow Cooker: In the slow cooker, add the whole mushrooms. Distribute the cubed butter evenly over the top of the mushrooms.

Add Garlic and Herbs: Sprinkle the minced garlic, thyme, salt, and pepper over the mushrooms and butter. If using soy sauce, drizzle it over as well for an extra depth of flavor.

Cook: Cover the slow cooker and set it to low heat. Let the mushrooms cook for 2-3 hours. If you prefer a richer flavor, you can set it to high heat for 1-2 hours, stirring occasionally.

Finish with Lemon: Once the mushrooms are tender and cooked through, stir in the lemon juice to add a touch of acidity that brightens the dish.

Garnish and Serve: Before serving, sprinkle chopped fresh parsley over the mushrooms for a pop of color and freshness. Enjoy them as a side dish, over grilled meats, or on top of a creamy pasta!
