2 cups elbow macaroni

1 lb ground beef (or turkey)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (28 oz) diced tomatoes with green chilies

1 small onion, finely chopped

3 cloves garlic, minced

2 cups beef broth

2 cups shredded cheddar cheese (plus extra for topping)

1 tbsp chili powder

1 tsp ground cumin

1 tsp smoked paprika

Salt and pepper to taste

1 tbsp olive oil

Fresh cilantro or scallions for garnish (optional)

Sauté the Base: In a skillet over medium heat, add olive oil. Once hot, add the chopped onion and minced garlic, sautéing until the onions are translucent (about 3-5 minutes). If using ground beef or turkey, add it to the skillet and cook until browned. Drain excess fat if necessary.

    Combine Ingredients: In your slow cooker, combine the sautéed mixture with kidney beans, black beans, diced tomatoes (with juices), beef broth, elbow macaroni, chili powder, cumin, smoked paprika, and a pinch of salt and pepper. Stir well to blend all ingredients.
