For the Shrimp Fajitas:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

3 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

Salt and pepper, to taste

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Tortillas (flour or corn, your choice)

For the Avocado Crema:

1 ripe avocado

1/2 cup Greek yogurt or sour cream

1 tablespoon lime juice

Salt to taste

A pinch of garlic powder (optional)

Fresh cilantro (optional, for extra flavor)

Instructions
 

Prepare the Avocado Crema:

    - In a blender or food processor, combine the ripe avocado, Greek yogurt, lime juice, salt, and garlic powder (if using). Blend until smooth and creamy. Taste and adjust seasoning if necessary. Set aside.

      Cook the Shrimp:

        - Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the sliced onions, and bell peppers. Sauté for about 3-4 minutes until they begin to soften.

          Add Garlic and Spices:

            - Stir in the minced garlic and continue cooking for another minute until fragrant. Sprinkle in the chili powder, cumin, and smoked paprika, mixing well to coat the vegetables.

              Add the Shrimp:

                - Push the veggie mixture to the sides of the skillet and add the shrimp in the center. Cook for 3-4 minutes or until the shrimp turn pink and opaque. Season with salt and pepper, and squeeze fresh lime juice over the top.

                  Heat the Tortillas:

                    - While the shrimp is cooking, warm the tortillas in a separate pan or microwave, just until they’re pliable.

                      Assemble the Fajitas:

                        - Serve the shrimp and veggie mixture on warm tortillas. Drizzle generously with avocado crema and sprinkle with fresh cilantro.
