4 salmon fillets (about 6 oz each)

Salt and black pepper, to taste

2 tablespoons olive oil

2 tablespoons Dijon mustard

2 tablespoons honey

1 tablespoon apple cider vinegar

2 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Lemon wedges, for serving

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Salmon: Pat the salmon fillets dry with paper towels. Season both sides with salt and black pepper to taste.

    Make the Glaze: In a small bowl, whisk together the Dijon mustard, honey, apple cider vinegar, minced garlic, and thyme until well combined. Set aside.

      Heat the Skillet: In a large skillet, heat the olive oil over medium-high heat.

        Cook the Salmon: Once the oil is hot, carefully add the salmon fillets skin-side down (if they have skin). Cook for about 4-5 minutes without moving, until the skin is crispy and the salmon is cooked about halfway up the sides.

          Add the Glaze: Flip the salmon fillets gently using a spatula. Immediately pour the honey mustard glaze over the fish. Reduce the heat to medium-low. Cook for another 3-4 minutes, spooning the glaze over the salmon occasionally, until the salmon is cooked through and flakes easily with a fork.

            Serve: Remove the skillet from heat. Transfer the glazed salmon to plates, spooning any remaining glaze from the skillet over the top. Garnish with fresh parsley and serve with lemon wedges on the side. Enjoy!
